We all know the world needs to eat less meat so why not try a vegetarian version of this recipe for a change? You can make a tofu version of this dish that will rival anything with meat.

Choose The Right Tofu

Choose a good firm tofu and drain it well.

Wrap it in kitchen roll or a tea towel to soak up any remaining fluid before you fry it. Then you can cut it into cubes or strips as required and sprinkle over a spice mix of freshly ground black pepper and fenugreek seeds (you can use any spices you like). Shake the spices around the bowl to coat the tofu well and leave it to stand.

Get the oil nice and hot and then drop in the seasoned tofu to fry it until the outside starts to turn a golden brown. Smoked tofu adds an extra twist too.

The salmon industry is under heavy scrutiny at the moment. Very high levels of anti-biotic’s are used in the farming process and the impact on the marine environment is proving much worse than anyone ever expected. Regulation has been poorly implemented globally and even farms that make claims of long term sustainability have been shown to routinely break their own rules and guidelines.

Grilled halloumi makes a wonderful vegetarian option to this tuna recipe. Simply slice it into 1cm thick slices and put it in a baking tray under the grill until it starts to turn golden brown. Turn and repeat. Then you can chop it into smaller pieces if you prefer. It is just easier to turn a larger slice than a lot of small pieces.

Seeds are wonderful. Nature’s most concentrated food source. They have all the ingredients the plant needs to survive wrapped in a convenient packet ready to use.
