Choose Your Rice
Key to this recipe for me was the choice of rice. For most recipes my go to rice is Basmati. I just adore the taste. However, with this recipe I immediately thought of using a risotto rice to make the whole recipe creamier. It worked a treat and I would thoroughly recommend you try it yourself.
Red Camargue Rice
You shouldn’t stop there though. Red Camargue rice might be a little harder to find but it is available in many supermarkets these days. It has a sweet but nutty flavour and a luxurious texture. You can use it when you want to make the meal one the guests really remember. Another addition is to include a little black wild rice. If you use the red Camargue rice with a little of the wild rice the difference in texture and taste works wonderfully together.
A Budget Alternative
If you are lucky enough to have a good Asian Supermarket near you the rice will always be better and cheaper than in other supermarkets, especially if you are buying big bags. If you look carefully you may well find large bags of broken basmati being sold at an amazingly cheap price. It is a great way to make your budget stretch further. The broken rice grains that aren’t considered good enough for sale as premium rice. It has the added bonus of being faster to cook and when prepared it looks more like couscous but it still has the flavour of any other good Basmati rice.

A Fiery Recipe
This recipe is quite fiery as it is and although I like hot food I tend to stick to one kind of chilli rather than 3 different lots. If I want it really hot I will use scotch bonnet peppers but bird eye chillies are my general go to chilli. You can find an incredible list here and they are easy to grow too.
Personal Taste
We all have personal preferences and with this recipe I just wanted more onion and garlic. You can make it as the recipe describes but if you do the chillies really are the dominant flavour. You could decrease the amount of chilli and increase the amount of garlic and onion to give your guests a richer more balanced flavour.
Padron Peppers
You can add Padron Peppers to this recipe to create something quite different. They aren’t as hot as chilli peppers but have a more complex flavour than sweet peppers. They work really well with the lentils and are complemented by an increase in the amount of garlic as described above.
