There is something reassuring about a big bowl of warming soup in winter. I tend to cook mine slowly, allowing the flavours to mingle thoroughly without losing the texture of the pieces of vegetable. They are wonderfully healthy and can top up your levels of vitamins and minerals at a time of year when you want your immune system in tip-top condition.

My Alternative To Winter Vegan Vegetable Soup

Sweet Soup For Dreary Days

You can use any combination of vegetables in this soup really, but the carrots and parsnips give a sweetness to the soup that you might not normally associate with vegetables.

A Nutritional Time Bomb

The nutritional value of carrots and beta carotene in particular are well known, but the parsnips add significant amounts of vitamin C and K as well as vitamin E, Magnesium, Thiamine, Phosphorus, Zinc and Vitamin B6. You also get the health benefits of Parsley, Thyme and Turmeric. You get a boost of vitamins A, C and K as well as a host of trace elements and minerals like calcium, Iron, copper, magnesium, manganese and potassium.

The Worlds Healthiest Foods

All three of the herbs listed also have recognised health benefits beyond basic nutrition. To go into detail here I would have to dedicate the complete article to this one meal, but you can find information about parsley, which has been called the one of the world’s healthiest foods, here.

Fashion And Food

Pearl Barley went out of fashion for a long while. It was once a staple ingredient in most people’s diet simply because it was cheap and filling. However, over recent years it has often been described as a super food and has gained in popularity again.

Nutritionally Complete

It is a very complex food nutritionally. You can add it as an extra ingredient in most soups too. A single cup will provide all the Selenium and Thiamine you need in a day. That same cupful will give you twice your recommended daily amount of manganese and half of your recommended daily amount of copper, magnesium, phosphorus, Iron and Niacin, and significant amounts of Riboflavin, Potassium, Zinc and vitamin B6. In some ways it might be easier to tell you what it doesn’t contain.

The Best Tonic Food I Know

Providing both Protein and Carbohydrates it is also high in fibre and low in fat. High in antioxidants it also improves the repair of cell damage and the protection of healthy cells. By attacking free radicals it can help with numerous health conditions, but you should research these properly if they might apply to you. This will help, but there are many other articles online. As a general tonic food it is hard to find anything that has such a rounded and complete nutritional content.

The Best Source Of Vitamin K On The Planet

Kale is another food that has made a resurgence in the modern era. It is one of the most nutritionally dense foods on the planet. Just 1 cup will provide 7 times the vitamin K, twice the vitamin K and more than enough Vitamin C for your recommended daily amounts. It also has high levels of manganese and is loaded with some very important antioxidants and flavonoids.

A Proven Winner

You will find some important information here and there are many other similar articles. They begin to explain some of the amazing health benefits that have now been clearly shown to be associated with an increase in the use of Kale as part of your diet.

Food For Thought

As you can see from the excerpt above, Lauren’s post has a great deal of nutritional information already. Instead of duplicating it, I will try and give you some different ideas to adapt the recipe.

Keeping All Of The Benefits

You could use carrots instead of sweet potatoes for one option. Carrots also have some amazing nutritional benefits so it doesn’t take away from this health factor in this warm winter vegan soup. Why not try using different lentils too? All lentils have great levels of protein. The flavours will be subtly different but not by much.

Add Some Sparkle

Coriander seeds will give you a distinct flavour that you can use instead of cumin seeds too. You could even add some freshly ground fenugreek seeds for some extra sparkle. They complement lentils beautifully and are a firm favourite in many dishes from Northern India

Wonderful Flavours

When your budget is tight this is a great easy and cheap meal that ticks all the boxes nutritionally. You get an amazing nutritional package and wonderful flavours from this simple recipe. Onions, Garlic, Ginger and Turmeric together make a wonderful flavour for any recipe. Using them with the sweetness of the carrot balances out the flavours in this simple but sumptuously luxurious soup.

An Alternative To Plant Milk

I do try to limit my use of plant milk products because of their environmental impact. This may well be better than cow’s milk but they do use a lot of water and power in the manufacture of the milk. So, having thought about it I decided to try and replace it. I poured boiling water over some pearl barley and left it to soak overnight. In the morning I brought the pan back to the boil to make sure the barley was cooked through and then sieved the mixture to separate the liquid. You can use this liquid instead of the coconut milk and the recipe works just as well. Adding the soaked pearl barley to the soup makes it even more filling too,

Try Aquafaba For Extra Luxury

You could also use Aquafaba in either the original or the adapted recipe. Using the whipped Aquafaba makes the rich creamy texture of the original recipe feel even more luxurious in your mouth. You can use it in many of the recipes you use. It really is a very versatile ingredient.

Alternatives To Orzo

You can change this wholesome vegan soup recipe in several ways quite easily. Each of the options listed will give the recipe its own subtly distinct flavour. Instead of changing any other ingredients I am just going to suggest some different ingredients to replace the orzo.

Try Bulgar Wheat For A Different Flavour

You have to try this recipe with pearl barley instead of the orzo. The nutritional impact of the pearl barley is amazing (see above/Link ). Another tasty alternative is to use Bulgar Wheat. It will give you a nuttier flavour. Couscous is another great way to change the recipe too. You can use literally any kind of rice or pasta instead. Risotto rice gives you a very different alternative recipe as it will thicken up the mixture much more and turn it into something rich, creamy and very filling.

The Wonderful World Of Chillies

Chilli makes a wonderful warming addition to most soups. This winter vegan soup recipe is built around the taste of the Chilli. Chipotle chillies have a lovely flavour but so do many other chillies too so don’t be scared to try others. At the mild and sweet end of the spectrum you could try Pepperoncini Chillies. They are sweet mild peppers usually sold pickled and are also known as Tuscan Peppers or Golden Greek Peppers. Jalapeno’s are well known from the world of fast food and are another great alternative.

Personal Favourites

My personal favourite is the classic bird eye chillies used in a lot of Thai food. You can Control the heat by removing the seeds from some of the chillies if you need to, retaining the flavour without making the recipe too hot. If you are feeling really brave you could try using Scotch Bonnet Peppers, but be careful to wash your hands after you have been chopping them to avoid painful accidents.

Incredible Chillies From Around The World

Here you will find a list with details and pictures of an incredible variety of Chillies, take a look and begin your own Chilli Adventure.

Making Your Job Easier

Just like with pumpkin, if you roast the butternut squash you get much more flavour. You can add even more flavour by sprinkling of a nice salt and pepper or spice mix when you put it in the oven. Simply cut it down the middle, put the pieces face up on a large baking tray, sprinkle on you spices or salt and pepper, roast them thoroughly, then simply scoop out the tasty flesh. You get a much fuller flavour and it makes the job of preparation much easier too.

One Of The Best Sources Of Vitamin A

Equally as important as any other vitamin the butternut squash is one of the best sources of vitamin A, even a small portion will give you your full recommended daily dose of vitamin A. It also contains a large dose of vitamin C. It is also rich in Beta Carotene, just remember, the brighter the colour of the flesh the better it is for you, just like with sweet potatoes. The Antioxidants it contains will help slow cellular damage and reduce inflammation, which can reduce the risk of several chronic diseases.

A Powerful Defence

Tomatoes are another one of those foods that has got a lot of publicity about its health giving benefits. As a great source of vitamins A, C and K it also contains some rather scientifically sounding compounds like alpha-lipoic acid, lycopene, choline, folic acid, beta-carotene, zeaxanthin and Lutein. These antioxidants form a powerful defence against cellular damage. They are the compounds that attack and neutralise the free radicals in our bodies that cause damage to our cells every day. Increasing the levels of antioxidants in the blood has been shown to reduce the risk of many of the diseases that have become more common in modern life.
