Vegetarian And Gluten Free

This amazing one pot vegetarian dinner recipe is both Vegetarian and gluten free. With lots of goodness packed into an easy to prepare meal it definitely gets my thumbs up.

Choose Your Rice

Key to this recipe for me was the choice of rice. For most recipes my go to rice is Basmati. I just adore the taste. However, with this recipe I immediately thought of using a risotto rice to make the whole recipe creamier. It worked a treat and I would thoroughly recommend you try it yourself.

Red Camargue Rice

You shouldn’t stop there though. Red Camargue rice might be a little harder to find but it is available in many supermarkets these days. It has a sweet but nutty flavour and a luxurious texture. You can use it when you want to make the meal one the guests really remember. Another addition is to include a little black wild rice. If you use the red Camargue rice with a little of the wild rice the difference in texture and taste works wonderfully together.

A Budget Alternative

If you are lucky enough to have a good Asian Supermarket near you the rice will always be better and cheaper than in other supermarkets, especially if you are buying big bags. If you look carefully you may well find large bags of broken basmati being sold at an amazingly cheap price. It is a great way to make your budget stretch further. The broken rice grains that aren’t considered good enough for sale as premium rice. It has the added bonus of being faster to cook and when prepared it looks more like couscous but it still has the flavour of any other good Basmati rice.

Tomato garlic and fresh basil really is a match made in heaven and this wonderful recipe takes full advantage of that. The recipe is quick and easy and really tasty just as it is. However, you know I always look at how I can make something a little better.

Pine Nuts And Mascarpone Cheese

Adding roasted pine nuts sprinkled over the top of this one pot vegetarian dinner recipe immediately makes it a little more special. If you want to go a step further you could use mascarpone cheese instead of cream cheese. The mascarpone will give you a richer more luxurious texture and taste which complements the pine nuts and basil in the most delicious way.

Clear Out Your Fridge

This recipe is a great way to use up any odd vegetables you have left in the fridge. We all need to waste less and finding good recipes than can use a variety of vegetables makes sure you have a way to use those vegetables you always have left over.

Creating Balance In Your Diet

The best way to balance out the nutritional content of a meal is to use as many different vegetables as possible. To help there are a few tips to remember. First, the brighter the colour of the vegetables the more goodness it is likely to have. Secondly, the more colours you use in a meal the more balanced it will be. A Fiery Recipe

This recipe is quite fiery as it is and although I like hot food I tend to stick to one kind of chilli rather than 3 different lots. If I want it really hot I will use scotch bonnet peppers but bird eye chillies are my general go to chilli. You can find an incredible list here and they are easy to grow too.

Personal Taste

We all have personal preferences and with this recipe I just wanted more onion and garlic. You can make it as the recipe describes but if you do the chillies really are the dominant flavour. You could decrease the amount of chilli and increase the amount of garlic and onion to give your guests a richer more balanced flavour.

Padron Peppers

You can add Padron Peppers to this recipe to create something quite different. They aren’t as hot as chilli peppers but have a more complex flavour than sweet peppers. They work really well with the lentils and are complemented by an increase in the amount of garlic as described above.

Peanut Sauce

The peanut sauce in this recipe finishes everything off beautifully. You can make it even better by using crushed garlic instead of garlic powder. Using fresh is always best in my eyes and its easy enough to do. Freshly ground black pepper helps too.

Toasted Sesame Seeds

You could add some toasted sesame seeds to finish the recipe and the sauce off. Peanuts and sesame seeds work brilliantly together and you can add them to the sauce or simply sprinkle them over the dish as a garnish at the end.

Flexible Flavours

This is one of those one pot vegetarian dinner recipes that gives you endless possibilities. There are so many ways to change up the recipe you could never get bored with it. You can swap the beans or the grains to give some amazing flavour combinations.

Butter Beans and Bulgar Wheat

You can use butter beans (Lima beans) instead of the Cannellini beans and Bulgar wheat instead of the quinoa. The butter beans have a velvety texture and rich, savoury, almost buttery flavour and the Bulgar wheat will give you a distinct nutty flavour.

Red Kidney Beans And Hemp Seed

Hemp seeds provide a serious amount of essential nutrition, they’re easy to cook and have a pleasant nutty flavour, like a cross between a sunflower seed and a pine nut. Red kidney beans are another great option, their firm, creamy, white flesh and full-bodied earthy flavour works amazingly well with the hemp seeds.

An Amazing Source Of Vitamin A

Butternut squash is one of the best sources of vitamin A available, even a small amount will give you your full recommended daily dose of vitamin A. It also contains a large dose of vitamin C and is also rich in Beta Carotene. Just remember, the brighter the colour of the flesh the better it is for you, just like with sweet potatoes.

Wonderful Leeks

Low in calories but high in nutrients leeks are a great addition here. They are particularly high in magnesium and vitamins A, C, and K. They also contain small amounts of fibre, copper, vitamin B6, iron, and folate. A rich source of antioxidants they contain allicin, the same sulphur compound that gives garlic its antimicrobial properties and kaempferol, a polyphenol antioxidant thought to protect against many serious illnesses.

The Magic Of Spices

I love Indian food and this is a classic and easy to prepare one pot recipe that ticks all the boxes. Nutritionally great, it looks wonderful and the taste is divine. You could try to make your own masala mix too. Using fresh spices really can make an amazing difference to any recipe.

The Perfect Accompaniment

No Indian meal is complete without some sort of flat bread. Whether it’s the humble Roti (chapatti) or an amazing Bhatura they are all worth the effort. With naan bread you could make some wonderful buttery garlic naan or a sweet Peshawar naan covered in honey. The possibilities are only limited by your imagination. Wonderful Distinct Flavours

This Vietnamese one pot vegetarian soup recipe brings some distinctly different flavours to your table. You should use sesame oil for the best results because it really does add a lot to the flavour. With ginger, lemon grass, cloves, star anise, coriander and five spice to complement the tofu and vegetables you get a really complex but wonderful flavour.

Tofu, The Chinese Protein Bomb

Tofu is an amazing food and can be cooked in many ways. I do like the firm Tofu best and I am a fan of the smoked varieties too. The tofu gives this Vietnamese recipe a protein packed twist and adds beautifully to the flavour.
