Nutritionally this recipe can be changed significantly by using different greens and seeds. I will do a breakdown using spinach and sesame seeds, but by using kale and chia seeds you could alter the nutritional profile a great deal.
The Bananas, avocado and spinach all contain high levels of vitamin C, so together you can be assured of all the vitamin C your body could need. You are also well covered when it comes to potassium and vitamin B6 as these are also contained in all 3.
Roasting Is Best
The sesame seeds I use are raw and unhulled. They are simply the best nutritionally. However, they do contain compounds to protect the nutrition inside. Roasting them gently before use means the nutritional content is easier to absorb in the body. It also releases the amazing flavour of the essential oils contained within the seed.
You can be assured the oils contained are healthy oils and along with the protein they give they provide high levels of calcium, magnesium, manganese and zinc.
Spinach, The King Of Vegetables
Spinach really is amazing when it comes to nutrition. I have already mentioned it’s high levels of vitamin C potassium and vitamin B6, but that is just the start.
